Whoopie pies are one of my favorite tasty treats. After spending six years living in Florida, where people are clueless about the chocolaty goodness of the whoopie pie, I was jonesing for a pie when I came home to Maine. I went on a quest to purchase a whoopie pie, but they just did not get the job done – the cake was either too dry or the filling too sweet. I was forced into making my own. I tracked down my mother’s recipe for whoopie pies, then I made up my own cream cheese based filling for my own take on the Maine classic pie. I brought the whoopie pies to a play date and they were a hit! Try out this gem – you will be sure to enjoy it!
1/2 C cocoa
Preheat oven to 350 degrees.
Combine all the wet cookie ingredients in medium bowl – eggs, milk, melted butter, vanilla. Cream together. Add in the dry ingredients – flour, sugar, baking soda, salt, cocoa. Mix together until smooth. Drop by spoonfuls onto ungreased cookie sheet. Bake 12-14 min, or until toothpick inserted into center of cookie comes out clean. Transfer to wire racks to cool completely.
To make the filling, combine confectioner’s sugar, cool whip and cream cheese (make sure it is softened!). Mix until thoroughly combined and smooth. Spread filling on flat side of cool whoopie pies! Enjoy!
